Real Taste Of Brazil – Cooking On Traditional Outdoor Wood Stove

A delicious and inspiring workshop for cooks and creative hands. Learn to build your own Brazilian stove and how to cook on it.

What makes authentic Brazilian food amazing? It’s the flavoursome ingredients, Brazilian cheer, and most of all, the special wood-fire stove.

Florence, a qualified Brazilian Chef and permaculture grower will show you how to make unique Brazilian dishes on the new traditional wood stove called the Fogao a lenha.

When you arrive at our permaculture food forest we will share welcoming handmade treats including pao de queijo (traditional cheese puffs) and Suco de Caju (juice of Caju – a Brazilian fruit).

 

Tour, Pick and Prepare Homegrown Food

After morning tea we will tour our mature permaculture food forest displaying some bush tucker plants and rare tropical fruits. Little Silkie chickens roam freely and are protected by a fenced-off border patrol of geese. We will pass the hen house then visit the Taro glade with an intensive range of vegetables. Here we will pick some greens and herbs for our cooking in the new traditional outdoor kitchen.

 

Modern Twist On Traditional Outdoor Kitchen

Our outdoor kitchen now has a wood-stove pizza oven and a new hybrid rocket-powered Fogao (Brazilian wood stove). The pizza oven was built by April and the Rocket-Fogao was built recently by Florence. This class will use home-grown food cooked on a home-made stove burning home-grown fuel. If you want to build your own super wood stove, this course will show you how. We will give you the plans and you will see how to adjust the fire to suit your cooking requirements.

 

Tasty lunch

In this course you will make delicious Brazilian dishes including:

  • Feijao tropeiro (pinto beans, bacon, chorizo, chinese brocolli fresh herbs mixed in crunchy semolina)
  • Vaca atolada (beef ribs in a juicy cassava sauce)
  • Frango com Quiabo (slow cooked chicken with okra)
  • Mandioca Frita (Fried Cassava)
  • Canjiquinha com couve (ground corn and greens)

[all dishes can be made gluten free]

Enjoy your relaxed lunch featuring produce from our garden cooked by you on the specialty wood stove that Florence built.

After lunch we show you how to build your own rocket stove, supplying you with plans to build your own rocket stove or fagao.

You will head home with some of your own goodies, recipes and confidence to make you own brazilian dishes as well as a copy of our design plans and the inspiration to make your own rocket boosted Fagao.

Without 14 days notice we cannot provide a credit or transfer, but you are more than welcome to send someone else in your place.
